Wayne Jacob's Smokehouse in LaPlace is a multi-generational andouille sausage producer and restaurant that has operated since 1950, specializing in the LaPlace-style smoked andouille that is the foundational sausage of Louisiana Creole cooking. LaPlace is known as the Andouille Capital of the World, and Wayne Jacob's is among the oldest continuously operating smokehouses in the region, using a wood-fired smoking process.
